Love Lentils

A Plant-Based, Gluten-Free, Oil-Free Recipe by Teja Shankara

6 cups lentils (french green or regular green/brown)
2 yellow onions, chopped
3 full Tablespoons ginger root, chopped finely

1 tsp cumin powder
1 tsp turmeric powder
½ tsp cayenne powder
1 ½ tsp smoked paprika powder
1 tsp curry powder
1 tsp ginger powder
1 tsp dried oregano
4 tsp Himalayan pink salt, fine

2 heads of garlic – about 22 cloves – peeled and cut in halves
1 red bell pepper, chopped
2 orange carrots, chopped
2 purple carrots, chopped
1 large stalk of burdock root, chopped
1 bunch of green kale, chopped, including stems

Suggestions for elevating your cooking to a high spiritual experience: Light candles and incense, turn on Krishna Das’ CD, Trust in the Heart (or other chanting music), and sing along while you cook! Chanting while cooking sends Love vibrations into the food!

Soak lentils for 8 hours (or overnight), then rinse really well, drain, and add 11 cups fresh water. Chop onions and ginger while bringing the lentils to a boil. Skim off foam (for a few minutes), then add onions and ginger and bring to boil again. Cover and cook at a high simmer (at least 10 bubbles going on surface) for 50 minutes. For that 50 minutes continue chanting while chopping the rest of the vegetables. After 50 minutes, first add the spices and salt and stir well, then add the remaining vegetables, and bring to a boil again. (It takes about 5 minutes to add everything, then another 5 minutes to bring it to a boil again.) Cook again covered at a high simmer for 20 more minutes.

This entire process, including washing the lentils really well, takes about 2 hours. Enjoy!
